The only member of the sea bream family found in New Zealand, Snapper are predominately caught in the Northern seas at the top of the North Island of New Zealand. Living generally inshore baby Snapper have been found in as little as 5m depth whilst adults can be found down to 200m (the edge of the continental shelf). Snapper can be identified by their golden pink to reddish skin with blue dots splattered along their upper sides. They are white underneath. Their size can vary according to region. Along the west coast they can be found at 15kg and 100cm in length. Whereas along the north coast they are smaller at between 0.5 to 2.5kg and 30 to 50cm in length.

A popular fish, of moderate resource, Snapper can be used for many kinds of dishes. Its flesh is white with a medium texture and it may be cooked using many methods, including smoking.
